Instructions

  1. The Eggplants: Choose small, tender eggplants. Make a cross-slit (X-cut) from the base, keeping the stems attached. Shallow fry in oil for 6-8 minutes until the skin blisters and they are 70% cooked.

  2. Roast the Masala: Dry roast 1/4 cup peanuts, 2 tablespoons sesame seeds, 2 tablespoons coriander seeds, and 1/4 cup dry coconut until deep golden. Grind into a very smooth, thick paste with 1/2 cup water.
