Pav Bhaji
Pav Bhaji is Mumbai’s most famous street food—a spicy, buttery, mashed vegetable medley served with soft, toasted buns. Historically created as a fast lunchtime meal for textile mill workers, it has evolved into a beloved national treasure. The 'Bhaji' is a complex curry where vegetables are mashed directly on a flat griddle with a heavy hand of butter and a unique blend of Pav Bhaji Masala. The result is a thick, tangy, and deeply flavorful gravy that is perfectly scooped up with 'Pav' (buns) that have been toasted in even more butter. It is a dish of pure indulgence, meant to be eaten hot with a squeeze of lime and a crunch of raw onions.
Chef's Secret: To get that vibrant restaurant-red color without using artificial dyes, add 2-3 small pieces of beetroot to the vegetables while boiling; it provides a natural, deep crimson hue.
Ingredients
- Potatoes 2 large
- Cauliflower 1 cup
- Peas 1/2 cup
- Carrots 1 medium
- Butter 4 tbsp
- Vegetable Oil 1 tbsp
- Cumin Seeds 1/2 tsp
- Onion 1 large
- Ginger-garlic Paste 1 tbsp
- Green Bell Pepper 1 medium
- Tomatoes 2 medium
- Pav Bhaji Masala 2 tbsp
- Kashmiri Red Chili Powder 1 tsp
- Lemon Juice 1 tbsp
- Cilantro 1/4 cup
- Pav Buns 8
Instructions
-
Begin by preparing the vegetable base: Chop 2 potatoes, 1 cup of cauliflower florets, 1/2 cup of green peas, and 1 carrot. Place them in a pressure cooker with 2 cups of water and a pinch of salt. Cook for 3-4 whistles until completely soft.Expert Tip: The secret to the perfect texture is overcooking the vegetables until they are almost falling apart before you even start mashing.
-
Drain any excess water from the boiled vegetables (keep it aside). Use a potato masher to mash the vegetables into a very smooth, consistent paste while they are still hot.
-
Heat 2 tablespoons of butter and 1 tablespoon of oil in a large flat pan. Add 1/2 teaspoon of cumin seeds. Add 1 finely chopped large onion and sauté until translucent.
-
Add 1 tablespoon of ginger-garlic paste and 1 finely chopped green bell pepper (capsicum). Sauté for 3-4 minutes until the capsicum softens and releases its distinct aroma.
-
Add 2 finely chopped tomatoes and a pinch of salt. Cook until the tomatoes turn mushy. Add 2 tablespoons of Pav Bhaji Masala, 1 teaspoon of Kashmiri red chili powder, and 1/2 teaspoon of turmeric.Expert Tip: Kashmiri chili powder is vital here; it provides the rich red color without making the dish overwhelmingly spicy for a novice palate.
-
Add the mashed vegetable paste to the pan. Mix thoroughly. Add some of the reserved vegetable stock if the mixture is too thick. Use the masher again to blend everything together directly in the pan as it cooks.Expert Tip: The 'double mashing' technique—once after boiling and once in the masala—is what creates the iconic, cohesive street-style texture.
-
Add another tablespoon of butter, a squeeze of lemon juice, and finely chopped cilantro. Let it simmer for 5 minutes on low heat. Taste and adjust salt as needed.
-
Prep the Pav: Slice the buns in half. Heat butter on a tawa, sprinkle a pinch of Pav Bhaji masala or cilantro, and toast the buns until they are golden and warm. Serve the hot Bhaji with a dollop of butter on top.
